Cookies and Cream Cheesecake

Cookies and Cream is one of, if not my favourite ice cream flavour so when I am dreaming up desserts (which happens very frequently), thoughts of cookies and cream often float through my mind. This cheesecake is oh so delish and is a total cookies and cream indulgence!

Chocolate Gooey Caramel Cookies

Caramel is almost always best when preceded with the word gooey and these cookies do that word combo complete justice! Filled with caramel choc chunks plus the addition of a caramel candy in the centre, these are soft, chewy and oh so gooey! 

Admittedly I had a bit of a spread-o disaster when creating this recipe and didn't heed my own instructions - patience is a virtue I tend to ignore in the kitchen! So to avoid ending up with a single cookie the size of the tray, make sure you do adequate chilling time in the fridge and give your cookies some space on the tray.

I've been experimenting with cookies for quite a while, and this recipe is one I thought worthwhile sharing! My Chewy Chocolate Chip Cookies take the flavour of a classic chocolate chip cookie and give it a soft but chewy consistency - it's the perfect cookie to serve with a glass of milk.

Cornbread

There are a lot of Cornbread variations out there, particularly those that feature high volumes of butter, cream and calories! This is my version, which is of course an attempt at a healthier Cornbread while still providing comfort and taste. 

This Cornbread version is more of a cake (rather than a spoonable version) so to serve you can cut into wedges. I did half quantity when first baked which is why mine is quite flat as I used the same sized dish, but it worked out just fine so feel free to do half if you're after less serves. Just make sure you chop down the cooking time - about 15-20 minutes is perfect.

I am a big fan of steamed buns, in particular Red Bean Buns (which I will be posting up in the not too distant future!) and these Coconut Steamed Buns are easy-peasy, fluffy and just how I wanted them to be. 

I make the dough in the breadmaker because it's just so easy, but you can use a food processor or the old fashioned way, by hand!

And, of course, you can also fill these with whatever tickles your fancy.

I Love... Cookies and Cream, with a capital 'L', particularly ice cream, and considering I love to bake I thought I would try to channel this favourite of mine into a new baking masterpiece... well my loyal subjects, I give you Cookies and Cream Fudge Slice. 

To be honest, this isn't really like a fudge but a gooey and delectable slice of cookies and cream heaven. You will not believe just how much this tastes like cookies and cream, it is fabbbbulous - even if I do say so myself. 

It's quite challenging to cut due to its stickiness, so if you're having problems pop it in the freezer to harden it up a bit. Store this in the fridge and if you have kids even though I haven't tried and tested on children, I'm confident this will go down a treat!

What can I say... I'm one of those people who wouldn't dare (and even if I wanted to I wouldn't have the will power) put a bowl straight into a sink of soapy water when the remnants of cookie dough still remain. In fact, you say cookie dough and I say nom, nom, nom!

So it was only a matter of time before I embarked on a recipe where I could indulge in cookie dough in all its natural glory! Be warned, this recipe is decadent and for those fellow cookie dough lovers - enjoy!
