Southern Peach Cobbler

A blatant pregnancy craving, I'm not even sure if I have eaten Peach Cobbler before, at least not that I can recollect, but nonetheless the baby wants what the baby wants! So on a cool Autumn evening, I created a scrumptious pudding that completely hit the spot. This is my take on Southern Peach Cobbler - peaches are nearing out of season, and let's face it, canned are way cheaper! And just as good ;)

Also, I used whole wheat flour to make it give it a bit more nutrition, but you could easily swap this out for plain white.

Oh how I love caramel. You put caramel with just about anything and you'll have my attention quicker than you can say 2 for 1 shoe sale! Well maybe not that quick...Anyway, while I tend not to really eat chocolate bars that often these days, I have always been a big fan of Snickers, so it was a natural creative progression for Snickers to provide the inspiration for my latest experimental baking adventure. An adventure that, although had its hiccups along the way, I deem very successful!

This slice is quite decadent, but the saltiness of the caramel and peanuts prevents it from being untolerably sweet. There is a rather tricky layer of nougat in there too, but worth the effort. It is totally delicious and one of my best yet!

I love stuffing. It's the perfect accompaniment to a roast dinner - I probably obtain this view because of the minimal amount of meat I eat, therefore a roast dinner is not all about the actual roast for me! Anyway, I digress... this stuffing is one that I've developed over the years. Switching out breadcrumbs for scrumptious cous cous and adding a few extras to make it delish!

You can use this stuffing to stuff the actual roast i.e. a chicken, or you can make cute wee stuffing balls too! Yum!

I am a huge fan of Christmas, in fact... I would go as far to say that it is my favourite time of year. I love absolutely everything about it, the festive cheer, the decorations, spending time with friends and family, and of course, the food! So it might surprise you that as of up until quite recently I had never made my own Christmas pudding before.

In my own signature style, I decided to develop my own Christmas pudding recipe and I must admit, that for a first attempt I am pretty happy with the outcome! This pudding is rich, decadent and moist, and with every bite I hope to bring as much Christmas cheer as I feel during the festive season.

I recently watched an episode of Jamie Oliver and normally I'm not a big fan of pizza (the whole anti-carbs and cheese thing doesn't really go well with pizza) but I must say, it did look good! And so, here I was feeling inspired and determined that I can manage a dash of carbohydrate and cheese... on occasion at least! Yet I couldn't really remember his version of pizza dough other than it had semolina in it. So this is my version, probably quite similar to his though Semolina/Flour proportions might be a bit different!

I've always had a fondness for Smarties, even though I don't eat a lot of them, but they just seem so colourful and playful! This is probably why I felt the need to include them into a cookie, because cookies are about happiness and so when you add the two together it's a match made in... well, the oven really, but you get what I mean! 

These cookies are soft but with a slightly crispy exterior. If you eat them without the Smarties (I know... why would you?) then they might not be very sweet, but with the chocolate Smarties in each bite they balance out to be quite tasty!
