I hadn't actually heard of 'pudding cookies' until quite recently but the alluring placement of the word pudding in the title was enough enticement to get me inspired! This is another of my own creations and while I haven't tried a pudding cookie baked by someone else, I'm fairly comfortable that these are a good depiction - they are at least how I imagined pudding cookies to taste! 

They are quite sweet, but the white chocolate and the vanilla flavouring is a simply gorgeous match! The texture is soft and almost moist. Enjoy!

If you're after a sweet treat combining the best of bedfellows: white chocolate and macadamia nuts, in a deliciously dense and moist blondie base, then my White Chocolate and Macadamia Nut Blondies are for you! 

I only recently heard of the Brownies white counterpart, The Blondie, and was determined to develop a recipe that reflected how I imagined they should taste. I must admit, I did far better than I thought and I am quite proud of this recipe. It's divine decadence with a beautiful soft sweet base filled with chunks of white chocolate and macadamia nut. Yum!

I completely underestimated just how easy it is to make your own tortillas, that's not to say I won't still buy the packet ones, but it's quite nice to know that if you are craving mexican and find your stash of store-bought tortillas is depleted, it won't take long to quickly whip up enough for the whole family! 

The other perk of course, is you can make them a lot healthier than the ones available at the supermarket. Admittedly I buy the 96% fat free ones anyway, so my at-home version is probably pretty comparable. I don't put any fat in mine, but if you don't mind a few extra calories and probably a bit of extra flavour, feel free to add in a teaspoon or two of butter/lard/oil, though you will need to accommodate by reducing the water a little or adding more flour! 

This recipe is for a single tortilla, but very large! Enough to accommodate my Big Bean Burrito! So if you are sussing out servings, consider it to serve two small/medium tortillas, or one very large one.

Nothing beats the smell of hot cross buns, cinnamon, and mixed spice, and these wee treats are something I absolutely adore. After buying them excessively from the supermarket, I was positive they must be able to be done at home and I was right! 

This recipe for whole wheat fruit english muffins is gorgeous popped in the toaster and then coated in some delicious New Zealand manuka honey! Or if you want to, change out the flour and exclude the spice and fruit to make some nice breakfast muffins - toasted with tomato and cracked pepper on top!

As a lover of white chocolate and a lover of Baileys, these two are just a match made in heaven as far as I'm concerned - I even had one tier of our wedding cake as this flavour combination! So naturally, when deciding on a birthday cake for myself, I wanted something decadent, indulgent and delish! I give you, my White Chocolate and Baileys mudcake. 

It's dense, heavy, moist, sweet, and oh-so-good, everything a mudcake should be.
