I hadn't actually heard of 'pudding cookies' until quite recently but the alluring placement of the word pudding in the title was enough enticement to get me inspired! This is another of my own creations and while I haven't tried a pudding cookie baked by someone else, I'm fairly comfortable that these are a good depiction - they are at least how I imagined pudding cookies to taste!
They are quite sweet, but the white chocolate and the vanilla flavouring is a simply gorgeous match! The texture is soft and almost moist. Enjoy!
Caramel is almost always best when preceded with the word gooey and these cookies do that word combo complete justice! Filled with caramel choc chunks plus the addition of a caramel candy in the centre, these are soft, chewy and oh so gooey!
Admittedly I had a bit of a spread-o disaster when creating this recipe and didn't heed my own instructions - patience is a virtue I tend to ignore in the kitchen! So to avoid ending up with a single cookie the size of the tray, make sure you do adequate chilling time in the fridge and give your cookies some space on the tray.

I must confess, caramel is one of my favourite flavours when it comes to baking and desserts. Put caramel in the description and half of myself is already consumed with lust. So as I perused the candy aisle at the supermarket when I was trying to figure out what to put into my basic chewy white cookie base, and a packet of big Jersey Caramel's caught my eye, I knew the decision had been made.
These cookies are the epitome of oozy caramel delights! Don't worry if they go a little caramel 'splat' when they come out of the oven, just leave them on a tray and the escaped caramel will cool enough for you to eat while still warm and chewy, or leave it to harden and you have crunchy caramel - the kind that gets stuck in your teeth, yum!
Another chocolate chip cookie to add to the Chicks Cookbook, but this one is different yet again! Unintentionally, this one is remarkably similar to the 'Cookietime' cookies, us kiwi's should all know and love. It's quite dark, has a beautifully rich flavour and the texture is sort of hard on the outside and a coarse crumby consistency on the inside.
A cookie that Cookie Monster would enjoy me thinks!
These cookies are soft but with a slightly crispy exterior. If you eat them without the Smarties (I know... why would you?) then they might not be very sweet, but with the chocolate Smarties in each bite they balance out to be quite tasty!
There are only three possible words to describe these cookies: Ah..Maze..Ing! I have to say, having created this recipe in a bit of a spur of the moment and being inspired by my love of peanut butter, I was a little nervous but they turned out to be quite possibly (and this is a big call!) the best cookie I've ever made!
I've played around with this recipe for a while, but I'm fairly confident I've got it pretty well sorted now! My boy certainly seems to think so and he doesn't even like sweet things, but still manages to polish off most of the batch!
