I've been experimenting with cookies for quite a while, and this recipe is one I thought worthwhile sharing! My Chewy Chocolate Chip Cookies take the flavour of a classic chocolate chip cookie and give it a soft but chewy consistency - it's the perfect cookie to serve with a glass of milk.
Chewy Chocolate Chip Cookies

- Complexity: very easy
- 125 g (1/2 cup) butter*
- 1/3 cup caster sugar
- 1/3 cup light brown sugar (tightly packed)
- 1/3 can condensed milk*
- 1 tsp vanilla
- 1 egg white
- 1 cup plain white flour
- 1 cup oatbran (ground as fine as possible)
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 cup milk chocolate chip drops

Preheat oven to 180°C (350°F) and line a baking sheet/tray with baking paper.
In a large mixing bowl, cream together butter and sugar. Add in vanilla, condensed milk and egg white - beating to mix after you add each one.
In a separate bowl, mix together flour, oatbran, salt and baking soda.
Slowly add the dry ingredients to the wet, stirring until mixed. Add in chocolate chips and stir until mixed.
Drop spoonfuls of the mixture onto the tray. The mixture is quite runny and the cookies spread out a lot, so make sure try to space them out and leave a space of about two inches between each cookie.
Bake for 8-10 minutes, until the edges start to turn golden brown and then remove from oven. Leave on the tray for 5-10 minutes and then transfer to a wire rack to cool completely.
