AShazRecipeIconOkay, so yes you can always make bread by hand, but when you have a breadmaker... it is just so damn easy!! And it's always nice to have new recipes to try in the breadmaker, so I give you my Nutty Fruit Loaf!

If you like sweet breads, hot cross buns, or the smell of warm spices wafting through the house, this is the loaf for you.

  • Complexity: very easy
Nutty Fruit Loaf

  • 400ml water
  • 1 tbsp honey
  • 4 tsp yeast
  • 1 1/2 tsp salt
  • 175g wholemeal flour
  • 200g strong bread flour
  • 135g rye flour
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 150g mixed dried fruit
  • 180g mixed nuts (roughly chopped)

  1. Easy peasy... simply throw all the ingredients into the breadmaker in the order listed above. Most breadmakers have a 'rest' period before things start to get kneaded, so make sure the nuts are last so they're not sitting in liquid getting soft! Otherwise, it really is that simple. I don't bother with using the fruit/nut dispenser container (if you have one on your breadmaker) for two reasons; #1: I don't think the kneading does any damage to the nuts or fruit, and #2: The sheer volume of nuts and fruit wouldn't fit in my compartment anyway!
