AShazRecipeIconI hadn't actually heard of 'pudding cookies' until quite recently but the alluring placement of the word pudding in the title was enough enticement to get me inspired! This is another of my own creations and while I haven't tried a pudding cookie baked by someone else, I'm fairly comfortable that these are a good depiction - they are at least how I imagined pudding cookies to taste! 

They are quite sweet, but the white chocolate and the vanilla flavouring is a simply gorgeous match! The texture is soft and almost moist. Enjoy!


White Chocolate Chip Vanilla Pudding Cookies

White Chocolate Chip Vanilla Pudding Cookies


  • 3/4 c butter
  • 3/4 c light brown sugar
  • 1/4 c caster sugar
  • 1 packet of instant vanilla pudding mix
  • 1 tsp vanilla
  • 2 egg whites
  • 2 c plain white flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 c white chocolate drops/chips
*I use a reduced fat or "healthier" version


  1. Preheat oven to 180°C (350°F) and line a tray with baking paper/parchment. In a large bowl, cream together butter, brown sugar and caster sugar until light and fluffy. 

  2. Add in vanilla pudding mix and vanilla extract, beating until combined. Add in egg whites, and beat until mixed thoroughly. 

  3. In a separate smaller bowl, whisk together flour, baking soda and salt. 

  4. Slowly mix the dry ingredients into the wet until just mixed before gently folding in your chocolate drops. 

  5. Drop large spoonfuls (a heaped tablespoon) onto the baking tray, evenly spacing between each cookie. Bake for 10-12 minutes, letting the edges just start to colour. Leave on the tray for 5 minutes before transferring to a wire rack to cool. 

    Don't overbake these! They might look a bit underdone, but they'll cook a little longer on the tray and the texture looks a bit misleading!
