Nutty Fruit Loaf

Okay, so yes you can always make bread by hand, but when you have a breadmaker... it is just so damn easy!! And it's always nice to have new recipes to try in the breadmaker, so I give you my Nutty Fruit Loaf! 

If you like sweet breads, hot cross buns, or the smell of warm spices wafting through the house, this is the loaf for you. 

Hummus

Hummus

There are a lot of hummus recipes out there, and to be fair, most of them are fundamentally the same and will produce a pretty good tasting hummus. I've explored a few methods and finally founded my own recipe which has just a few additional techniques that produce, what I deem to be, a pretty good interpretation of this fabulous accompaniment!

And did I mention mine is very healthy too!

I recently watched an episode of Jamie Oliver and normally I'm not a big fan of pizza (the whole anti-carbs and cheese thing doesn't really go well with pizza) but I must say, it did look good! And so, here I was feeling inspired and determined that I can manage a dash of carbohydrate and cheese... on occasion at least! Yet I couldn't really remember his version of pizza dough other than it had semolina in it. So this is my version, probably quite similar to his though Semolina/Flour proportions might be a bit different!

Advocado is a bit of a strange fruit - yes that's right, it is in fact a fruit - with such a plain flavour and it took many years before I decided I liked it, but since then I have well and truly embraced it, or more importantly its biggest descendant, Guacamole. Instigated by my love of Mexican food, Guacamole is a perfect addition to practically any Mexican meal - burritos, tacos, fajitas, chili... the list goes on! 

Of course there are tonnes of Guacamole recipes out there, all slight variations around the fundamental advocado, and with my Holy Moly Guacamole recipe I try to keep the focus on its star with a very simple version. 

Red Bean Buns
  • Time: 40 minutes (plus 40 minutes rising time)

Red Bean Buns

I can't remember when exactly I discovered the magic that is Red Bean Buns, but since whenever that moment was, I have devoured my fair share of these fluffy, sweet gorgeous buns! 

These buns are fluffy and pillowy, and in traditional Japanese style, filled with delicious Anko (sweet Adzuki bean) paste. If you cook up a batch, simply store them in the freezer and about 30 seconds in the microwave (or you could steam a few at a time to reheat) and it's instant Red Bean Bun goodness at your fingertips.

I am a big fan of steamed buns, in particular Red Bean Buns (which I will be posting up in the not too distant future!) and these Coconut Steamed Buns are easy-peasy, fluffy and just how I wanted them to be. 

I make the dough in the breadmaker because it's just so easy, but you can use a food processor or the old fashioned way, by hand!

And, of course, you can also fill these with whatever tickles your fancy.

Formula One Race Car Cupcakes

Formula One is a big event here in Melbourne and my boy is a big fan, so I felt it necessary to bake some cupcakes for the boys! 

These cute as a button cupcakes could be used for a wee kiddies birthday or for anyone who loves cars, but I'm using them in tribute to Formula One (go Ferrari!).
