It's not very often that I manage to bake something that looks as pretty as it tastes, but these adorable Raspberry and White Chocolate Caramel Tarts are finally fitting of that category!

This was a recipe I developed over Christmas time when I was feeling notably festive and wanted something that is easily shared between family and friends. With a gooey caramel filling, encased in a gorgeous shortbread base, and then topped with white chocolate and a single raspberry, you'll definitely get a few comments for delivering these to the table!

My love of peanut butter continues into the world of puddings and this particular recipe combines one of my faves, Sticky Date/Toffee Pudding, with the wonderfulness that is peanut butter!

Dubbed my Peanut Butter Sticky Toffee Pudding, this is rich, decadent and oh so delicious on a cold winter's night with a big scoop of vanilla ice cream on the side! (Thanks to Felicity Cloake for the inspiration from her Sticky Toffee Pudding recipe!).

Caramel is almost always best when preceded with the word gooey and these cookies do that word combo complete justice! Filled with caramel choc chunks plus the addition of a caramel candy in the centre, these are soft, chewy and oh so gooey! 

Admittedly I had a bit of a spread-o disaster when creating this recipe and didn't heed my own instructions - patience is a virtue I tend to ignore in the kitchen! So to avoid ending up with a single cookie the size of the tray, make sure you do adequate chilling time in the fridge and give your cookies some space on the tray.

Oh how I love caramel. You put caramel with just about anything and you'll have my attention quicker than you can say 2 for 1 shoe sale! Well maybe not that quick...Anyway, while I tend not to really eat chocolate bars that often these days, I have always been a big fan of Snickers, so it was a natural creative progression for Snickers to provide the inspiration for my latest experimental baking adventure. An adventure that, although had its hiccups along the way, I deem very successful!

This slice is quite decadent, but the saltiness of the caramel and peanuts prevents it from being untolerably sweet. There is a rather tricky layer of nougat in there too, but worth the effort. It is totally delicious and one of my best yet!

Daddy's Dark Chocolate Mud Cake with Salted Caramel Ganache

The name might be slightly misleading for this decadent cake, as my father is about as capable in the kitchen as Stevie Wonder, so where does the naming come from? Well quite recently it was my dear old pop's birthday and being a fan of chocolatey goodness, I knew I had to do something special!

This cake could easily be used as a dessert, it's rich, decadent and definitely indulgent but not in a 'make you feel sick after one bite' kind of way. The cake itself is dense, moist and almost a blur between a flourless chocolate cake and a mud cake - best made in advance and it will fudgey itself up in the fridge. The caramel is simply delicious and could be used in a tonne of recipes! Be warned, the sheer density of this cake can make your caramel squeeze out the sides, but hey, just cover those parts up with more dark chocolate ganache!

It's a kiwi classic, a close relative of caramel slice and one of my personal favourites from the bakery cabinet. Up until recently, I didn't actually realise the name Tan Slice is a New Zealand thing and for some of you out there, you may know it by another name such as Caramel Crumb Bars. Regardless, this slice is simply divine! 

I have quite the penchant for anything caramel, so while I have provided the traditional Tan Slice recipe, I would recommend doubling the quantity (or one and a half if you're not quite that daring!) of Caramel Filling to replicate that ridiculously thick layer that is sickeningly satisfying!

I must confess, caramel is one of my favourite flavours when it comes to baking and desserts. Put caramel in the description and half of myself is already consumed with lust. So as I perused the candy aisle at the supermarket when I was trying to figure out what to put into my basic chewy white cookie base, and a packet of big Jersey Caramel's caught my eye, I knew the decision had been made.

These cookies are the epitome of oozy caramel delights! Don't worry if they go a little caramel 'splat' when they come out of the oven, just leave them on a tray and the escaped caramel will cool enough for you to eat while still warm and chewy, or leave it to harden and you have crunchy caramel - the kind that gets stuck in your teeth, yum!

There are only three possible words to describe these cookies: Ah..Maze..Ing! I have to say, having created this recipe in a bit of a spur of the moment and being inspired by my love of peanut butter, I was a little nervous but they turned out to be quite possibly (and this is a big call!) the best cookie I've ever made! 

Think chewy, peanut-y, caramel-y, totally delish!
